Kitchen Kush: One bowl double-almond cake (recipe)

Almond is, to me, one of the most delicious flavors. I love baking with almonds and make everything from almond filled croissants to pancakes with almonds and almond paste. This cake is crazy moist and has a fabulous flavor. The house smells so good when it is baking, you have to come over! And the one bowl thing is a delight. So, so simple.

For the butter I used Jack Herer, my go-to sativa when I want to be full of creativity and energy. I love the taste and smell, kind of woody and earthy, and it seems to be very long lasting.

A grower friend gave me a bunch so that I could make him some medibles to help him deal with his focus issues. He claims that this weed makes a huge difference in his ability to concentrate. Cannabis does all these amazing things. I just love it!

One Bowl Double Almond Cake with benefits

Serves 8-10

¾ cup cannabutter, softened

1½ cups sugar

2 eggs

1 heaping tablespoon almond paste

1 tablespoon almond extract

1½ cups flour

Pinch salt

2 tablespoons sugar

¼ cup slivered almonds

Directions

Heat oven to 350 degrees and grease/flour a cake pan, or use parchment paper.

1. In a bowl, combine the butter with the sugar and use an electric mixer until consistency is smooth.

2. Add the eggs, almond paste, almond extract, the flour and pinch of salt. Mix until just blended.

3. Pour batter into greased pan. Sprinkle with the remaining sugar and the slivered almonds before placing the cake in the oven.

4. Bake until light golden brown and a cake tester comes out of the cake center clean. Allow to cool for at least 10 minutes before cutting. Enjoy!
